La Pastora is grown between 1250-1650m above sea level making it a dense bean. It is grown in the San Marcos, Tarrazu area of Costa Rica. This higher altitude and cooler average temperature allows the bean to mature more slowly. This allows the coffee plant to impart more coffee characteristics into every bean. Grown by Costa Rican farmers with 53 years of experience this coffee is a favorite. This community in Costa Rica focuses on respecting the environment while producing an aromatic and flavorful coffee that works well in both hot and cold brewing. A goal of the community is to use some of the coffee money to improve the water distribution and local well-being of the people. Taking care of the community and providing basic human needs is an integral goal of producing this coffee.  Cupping:  Jasmine break, round  body, Swiss chocolate, pineapple, crisp/clean/bright.
